Zucchini Bites 

Hello, I'm Janet and I have a snack problem.

I must always be snacking on something. When I'm not snacking I'm either thinking about snacking or planning my next snack :(

Fortunately, I decided to embrace my snackdiction ! :D

 

But because #fitfam, I've decided to mix and match my snacks between healthy (ish) and not (oink).

​

These little snackies are just the best ! Not only are they absolutely yummy, minimum stress is required in prep !

Ingredients:

 

1/2 cup all-purpose flour

1/4 cup freshly grated Parmesan cheese

1/4 teaspoon dried mixed herb

Salt, to taste 

Black pepper, to taste

1 zucchinis, thinly sliced into rounds

2 large eggs, beaten

2 tablespoons chopped fresh parsley leaves

Prep:

​

Whisk eggs.

​

In a large bowl, combine flour, parmesan, mixed herbs salt and pepper, to taste. Set aside.

​

Instructions:

 

1) Preheat oven to 190 degrees celsius. Lightly oil a baking sheet or coat with nonstick spray.

​

2) Working in batches, dip zucchini rounds into eggs, then dredge in flour mixture, pressing to coat.

​

4) Place zucchini in a single layer onto the prepared baking sheet.

Serve immediately, garnished with chopped parsley, if desired.
