Jumbo Meatball Pasta

This sauce was simple but oh so tasty and the meatballs were grilled perfectly, not dry and hard like how it turns out sometimes when you fry them. 

Again the Chef was kind enough to share his recipe with us so enjoy, and its such a quick and easy one just the way I like em.

(Maybe I'll do a 30 minute series or something, because everyone loves a quickie...)

Prep time: 1 min

Cook time: 30 mins

Total time: 31 mins

Ingredients:

 

Minced beef, 300g

Onions, 1 small

Breadcrumbs, 1/2 cup 

Egg, 1

Stock cubes, to taste 

Salt, to taste 

Oregano/ mixed herbs, 1 tbsp 

Chopped tomatoes, 1 tin

Tomato paste/ purée, 1 tbsp 

Garlic, 1 large 

Olive oil, 4 tbsp

Brown sugar, 2 tsp 

Red wine, a dash

Grocery Shopping:

SPAR, Lekki

 

For the Tomato sauce

 

Prep:

 

1. Chop garlic,dice onion and set aside.

 

Instructions:

 

1. Fry chopped onions and garlic in olive oil and add chopped tomatoes. 

​

2. Cook for 10 mins on low heat, then add salt (to taste), tablespoon of sugar, stock cube, oregano/herbs, splash of red wine and tomato paste. 

​

3. Cook for approx 10 more mins, turn off hear and set aside. 

 

For the meatballs, wash your hands!

 

1. In a large bowl combine minced beef, beaten egg (for binding), seasoning and breadcrumbs and mix in with hands.

​

2. Scoop and mold mix into large balls and place in baking tray. 

​

3. Stick it in a preheated grill at 190dc and grill until each ball is cooked through, check frequently by piercing with a knife or fork. 

​

4. Once cooked, add the meatballs to tomato sauce and simmer on low heat for 10 mins. 

​

done. Cook your favorite pasta according to packet instructions, once cooked, top with the meatball sauce...and enjoy !

PS. I forgot to top with parmesan and black pepper, make sure you don't for maximum satisfaction !
