Chocolate Mousse with Cookies
chocolate heaven...

Yield: 6 servings

Ingredients:

Plain milk chocolate, x4 bars
Egg yolks, x4
Chocolate chip cookies, x2
Whipping cream, 2 cups
Vanilla extract, to taste
Ground cinnamon, to taste
Sugar, to taste
Grocery Shopping:
Prep:

1. Whisk separated egg yolks and set aside
2. With an electric mixer, beat remaining 1 1/4 cups whipping cream with 2 tablespoons sugar until the cream is stiff then set aside
3. Crush cookies into small chunks and set aside

Instructions:

1. Add 2 tablespoons sugar, and 3/4 cup of the whipping cream to the whisked egg yolks.
2. Melt chocolate in a bowl over another bowl filled with boiled water
3. Cook the mixture over medium-low heat and ensure to stir continuously until the mixture coats the back of the spoon (do not let it boil) !
4. Remove the mixture from the heat and whisk in melted chocolate, add cap of vanilla extract and 2 pinches of ground cinnamon.
Set aside and chill until the mixture is cool
5. Pour in the chilled chocolate mixture into the remaining whipped cream and gently fold using a sturdy wooden spoon or rubber spatula.
6. Layer the chunks of chocolate chip cookies into small serving dishes before spooning the chocolate mixture on top and chill in the refrigerator for minimum 30 minutes.
7. Bring to room temperature before serving.
