Efo Riro

ft Maggi Naija Pot 

If you know me you already know I'm a village girl, but when Maggi showed up with a Mystery Box with the Naija Pot cubes I didn't know what I was going get when I was done cooking.

I had seen the advert selling #bottompot dreams, but I wasn't sold yet. 

 

The first thing I had to do was smell the cube (I'm all about the smells) and instantly I knew. 

BOTTOMPOT !

Better still, bottom pot without the actual bottom part !

Just flavour flavour flavour. 

​

The cube packs the perfect punch of our favorite dried fishes that give us that local/mam put taste.

I'm a huge fan and the fact that I'm saying this for free...says something.

Maggi Naija Pot Cube is da bomb !

I would advise not to use salt (or just a little) when using the cube because it's just not necessary, I used salt but found that I didn't need it, luckily the Efo wasn't salty or anything but I realized I could have done without salt. 

​

Ingredients: 

​

Chopped Shoko Leaves, 2 cups  

Palm Oil, 4 tbsp 

2 Medium Tatashe Peppers

4 Tomatoes  

6 ata rodos (scotch bonnets)

Chopped ginger, 1 tsp*  

1 Large Onion

Stock Fish, 1/4 cup

Smoked Fish, 1/4 cup

Crayfish, 2 tsp  

Handful of Dried Prawns 

Iru, 2 tsp 

Beef Stock, 1/2 cup 

Maggi Naija Pot Cube, x2

*I used Ojoro Kitchen's chopped ginger*

Prep: 

​

Chop leaves. 

Together blend peppers, tomatoes, 1/2 onion, 2 garlic and ginger. 

Chop the other half of the onion and dice 2 garlic cloves, set aside.  

Chop ata rodo and set aside. 

Rinse iru and set aside. 

​

Instructions:

​

1. In a pot, heat palm oil and add chopped onions and diced garlic, fry together for 30 seconds before adding the ata rodo. 

​

2. Add blended peppers to the pot and cook on medium/high heat for 10 minutes. 

​

3. Add beef stock and stock fish, smoked fish, crayfish and dried prawns. Stir and cover for 5 mins. 

​

4. Then season with Naija Pot seasoning and stir. Reduce the heat to low. 

 

5. Add Iru, stir and simmer for 3 minutes. 

 

done. Add leaves to the pot, stir and cook for 5 minutes on low heat. 

 

Remove from heat and serve with any side of your choice. 

​
