Sunny Egg and Avocado Sandwich

Yield: 4 servings

Ingredients:

​

1 large baguette

4 large eggs

2 tablespoons of olive oil

2 tbsp Butter

Parsley (fresh) 

2 Ripe Avocados

Black Pepper 

Salt

​

Grocery Shopping:

​

Shoprite, VI

 

Prep:

​

In a bowl add butter and parsley, mix the parsley and butter together and set aside.

Cut open and scoop out 1 avocado onto a small bowl, add 2 tsp of black pepper and mash the mixture leaving lumps of avocado.

Hollow and slice the second avocado. Set aside. 

 

Instructions:

1. Cut your baguette into 4, cut open each mini baguette (down the side) and butter both sides with your butter and parsley mixture. I like Then butter on the avocado mixture on both sides.  Set the mini baguettes aside.

2. On a large skillet at medium heat, add olive oil and heat for about 20 seconds or until the oil is hot. 

Crack the eggs onto the skillet, sunny side up and while the eggs are frying, add dashes of salt and black pepper to taste (I'm obsessed with black pepper so I put loads on). 

​

3. Traditionally sunny side eggs are only fried on the bottom side so fry for about 2 minutes before removing from pan. But if you're like me and want to fry both sides, once the eggs have fried on the bottom side for about minutes, flip them over to fry the other side for another 30 seconds. 

​

done. Once eggs are ready to your taste, place an egg in each of the mini baguettes, top the egg with slices of avocado and you're done !

If you're like me you should sprinkle some extra black pepper and Parmesan on your open baguette...extra yum :).
