STIR FRIED QUINOA

I'm not one to brag, especially about food. But this here ...

Yield : 2 servings 

Prep time : 10 mins

Cook time : 15 mins

Total time : 25 mins

 

Ingredients 

 

Quinoa 100g

Red bell peppers x5 

Mushrooms 

Scotch bonnets x 4 

Zucchini 

Half a small onion 

2 small gloves of garlic 

Salt 2 tsp

Black pepper 1tsp

Paprika 2tsp

Basil 1tsp

Coconut oil 3 tbsp

Prep:

 

Dice onions and garlic. 

Deseed and cut 1 bell pepper into chunks. 

Deseed and cut off the tops of 4 bell peppers, rinse and set aside. 

Chop mushrooms. 

Slice zucchini. 

Dice scotch bonnets. 

*Pre heat grill at medium*optional 

 

Instructions: 

 

1) Rinse and cook 2 small cups of Quinoa according to packet instructions. (One part quinoa, Two parts water. Between 15-20 mins on low-medium heat).

2) On a large skillet, heat 2 tablespoons of coconut oil, add onions and garlic, fry for about 2 minutes. 

​

3) Stir in the bell peppers and scotch bonnets, fry for a further minute before adding paprika, basil and black pepper, whilst stirring add mushrooms and zucchini.

*Place the topless bell peppers in the grill at 170 for 10 minutes.*opitonal

 

4) Stir in the cooked, drained quinoa and add salt. Stir and reduce to low heat and fry undisturbed for 5 minutes.

5) Stir and remove the skillet from heat.

 

6) Generously scoop quinoa stir fry into the topless bell peppers with a spoon.

*Optional* 

You don't have to grill the bell peppers, recipe also works with fresh peppers.
