Hawaiian Fried Rice
I’ve not always been a fan of Hawaiian style dishes, (you won’t catch me eating Hawaiian pizza) but this just works. What can I say ? Yum is yum.
The pineapple…the ham…the rice.
Just. Works.

Ingredients:

Parboiled Basmalti Rice 1 1/2 small cups
1 large white onion, diced
Olive Oil 2 tbsp
Mixed vegetables 1/2 cup
1 pineapple
1/4 cup fresh pineapple juice
3 large slices of fresh ham
Fresh parsley
Soy Sauce (2 tablespoons)
Salt (to taste)
Paprika (2 tsp)
Mixed dried herbs (2 tsp)

Prep:
Slice and dice onion.
Dice fresh parsley.
Cut ham into small cubes.
Half, hollow and dice pineapple keeping aside 1/4 of its juice.
Instructions:
1. Add olive oil to a large skillet, once heated add onions and fry for 1 minute then add mixed vegetables and stir.
Fry the onions and mixed vegetables for about 3 minutes on low heat and then add mixed dried herbs, paprika and salt.
Fry contents of the skillet on low heat for another 3 minutes and then add ham and fry for a further 5 minutes before pouring in the pineapples.

2. Once pineapple are added to the skillet, immediately stir in the rice. Cover the skillet and cook on low/medium heat for 5 minutes.

3. Then add pineapple juice, soy sauce and stir. Leave to cook undisturbed for 10 minutes increasing heat to medium.

done. Take the skillet off the heat, add chopped fresh parsley and stir.

Serve immediately, in the hollowed pineapple shells (or not).
Eat.
