Chinese Special Fried Rice 

I loved Chinese food so much growing up, my parents used to joke that I would bring home a Chinese man.

I mean whats there not to love about Chinese food, and don't even get me started on Chinese curry on chips.

That's a story for another day....

This is the perfect fakeaway meal, I mean take away Chinese...at home ?!!

Love love love. 

And best of all is that you can make it to your exact taste ! No more  "extra pepper please" (that's me) you can add as much pepper as you like !

​

Don't get me wrong there are definitely a good few Chinese take away options in Lagos but if you're like me and like the satisfaction of knowing exactly whats in your food, then you'll love this take away hack.

And, well...its much cheaper than ordering in so no brainier :-)

Yield: 3 servings
Prep time: 5 mins 
Cook time: 25 mins 
Total time: 30 mins

Ingredients:

​

2 cups of cooked rice
1 large chicken breast
3 strips of bacon

1 large egg

1 cup of mixed vegetables

2 green onions
2 tablespoon of soy sauce

1 tablespoon of sesame oil

½ teaspoon ginger powder

2 teaspoon of olive oil

3 scotch bonnets (ata rodo)

2 garlic cloves

1 small onion

Grocery Shopping: 

​

Spar, VI 

Green onions: Delis Supermarket, VI

Prep:

​

Cut chicken breast into 1 inch chunks, season with salt and black pepper and set aside.  

​

In a small bowl, add soy sauce, sesame oil, ginger powder, stir and set aside.

Dice garlic and slice onions. Set aside. 

​

Chop scotch bonnets (with or without seed),  set aside. 

​

In a bowl, whisk egg and set aside. 

 

Instructions:

​

1) Fry the whisked egg in a small saucepan, whisking continuously to make sure it remains scrambles.

 

2) Add bacon to a frying pan and fry on low heat (with or without oil) for 5 minutes on one side and 3 minutes on the second side. Once fried, remove from heat and set on to a paper toweled plate to drain any excess fat. Once cooled, cut the bacon strips into small cubes.

3) Leaving about 2 tablespoons of fat in the frying pan, add the chicken chunks and fry for 5 minutes, turning frequently to ensure all sides are well cooked.

​

4) Once chicken is ready, remove from skillet and place onto a paper toweled plate to drain any excess fat, and set aside.

​

5) In a large skillet, heat 2 tablespoons of olive oil, once heated add garlic and onions and fry together until transparent. Then add peppers and vegetables stir together and fry for about 5 minutes.

6) Then add chicken and bacon, stir.

7) Stir in rice and fry all ingredients together on low heat for 3 minutes then add the soy mixture.

done) Fry undisturbed for a further 3 minutes before removing from heat.

​Your Chinese Special Fried Rice is ready !

 

Serve immediately with any side of your choice, no side works pretty well too :).
