Chicken and Jalapeño

Pizza Buns 

I'm not good at making pizza dough, I've never actually tried but I've tried other baking type things and I just know it is not my forte which is ironic because I love anything pastry based, baked or fried doughy flour...drool.

This is a good cheat if you like pizza but like me can't make the dough from scratch, it has all the ingredients that you love about pizza but without all the work ! :) 

​

The butter and garlic/parmesan is key because I think thats what really gives it the pizza taste rather than just being an ordinary bun, so don't skim out on that because I've made it without before and it just wasn't quite the same.

Cook time: 20 mins

Total time: 25 mins

Ingredients:

​

Sandwich Buns or Dinner Rolls, x12

Chicken Breasts, 400g

Jalapeños, 100g*

Pizza Sauce, 100ml*

Grated Cheddar Cheese, 200g* 

Melted Unsalted Butter, 2 tbsp

Grated Parmesan, 2 tbsp

Fresh Parsley, 1 tbsp 

Olive Oil, 2 tbsp

Salt, 1 tsp 

Black pepper, 1 tsp 

Cajun seasoning, 2 tsp

Grocery Shopping:

Prep: 

​

Clean and chop chicken breast into 1 inch chunks, season with salt, black pepper and cajun seasoning . Using your hands, make sure the chicken is well covered in seasoning and massage the chunks to coat. 

​

Chop parsley and set aside. 

​

Slice buns down the middle, separating the top and bottom and set aside. 

​

Pre-heat oven at 150 degrees Celsius.

Instructions:

​

1. In a large skillet or frying pan, heat 2 tbsp of olive oil then add chicken breast, fry for approx. 7 minutes on medium heat, turning frequently. Once the chicken chunks are golden and cooked through, removed them from the heat onto a paper toweled plate and set aside. 

​

2. In a small saucepan, melt the butter and add the chopped parsley and parmesan, stir continuously until the parmasen has melted. Set aside. 

 

3. To the bottom half of the sliced buns, generously spread a thick layer of the pizza sauce.

4. Begin by layering chicken chunks, Jalapeño and cheddar. 

5. Cover with the top of the bun and spread on the parsley and Parmesan melt. Generously. Set some aside for topping later. 

6. Place the bun in the preheated oven, increasing the heat to 170 degrees Celsius. Make sure the rack is not too close to the direct heat so that the top doesn't crisp before the cheese melts (trust me). 

 

7. Cook your buns in the oven and check after 10 mins that the cheese has melted. 

 

done. Remove the buns from the oven and spread another layer the Parmesan melt. 

 

Your Chicken and Jalapeño Pizza Buns are ready ...

Serve whilst hot, but pizza its still pizza, taste pretty good warmed up in the microwave the next day :).
