CBLT WRAP

BBQ Chicken, Bacon, Lettuce and Tomatoes 

With some left over chicken breast from dinner I made wraps for the next day’s work lunch.

 

Not everyday order for lunch.

 

I’ll be honest, my wraps used to be really dodgy, where all the filling falls out of the bottom kind of dodgy, but I really love these so I had to get the hang of it.

I’m still no sharwarma guy but at least half my wrap won’t fall on the plate.

This is cheeky because the classic BLT is perfectly fine, but I wouldn't be living up to my name if I didn't go further and pig out, so of course there has to be chicken as well.

And bbq because...bbq.

Chances are you probably already have all or most of the ingredients to this at home so its a no brainer, and the wrap can easily be substituted for bread.

So dig out your lunch boxes, we're changing the game.

Yield: 4 wraps

Prep time: <5mins 

Cook time: 15mins

Total time: <30mins

Ingredients:

 

Chicken breasts x4

Bacon 4 strips 

Lettuce 100g

2 large Tomatoes

BBQ Sauce (as desired)

Flatbread x4

Olive oil 3 tbsp 

Salt (to taste)

Chili powder (to taste)

Paprika 2 tsp

Cayenne pepper 1 tsp

​Prep:

​

Get BBQ sauce out and set aside at room temperature.

Slice tomatoes and set aside. 

Chop chicken breast into 1 inch chunks.

Season chicken chunks with salt, chili powder, paprika, cayenne pepper, toss and set aside. 

Rinse and dry lettuce with a paper towel and set aside.

Instructions: 

​

1. In a skillet or frying pan, heat 2 tbsp of olive oil and add chicken chunks.  Set burner to low and fry for 10 mins, turning frequently until the chunks are cooked through and browned (that's exactly what we want). Once they are ready, place on a paper towel to drain any excess oil. 

​

2. Drain the remaining oil from the pan leaving about 2 tsps, return the pan to the heat and add bacon strips, fry strips on each side for 3-5 minutes (depending on desired crispiness) then remove the bacon strips onto a paper towelled plate and set aside.

3. On a dry pan, heat each wrap for 30 seconds on each side and lay on a plate or board to prepare for wrapping.

done. Start with a light layer of BBQ Sauce all across the wrap, then chose a side of the wrap (left or right) and layering downwards add lettuce, chicken, bacon, tomato and more BBQ sauce :). Roll the wrap up toward the opposite side (left or right) and fold inward at both ends. 

Repeat same with remaining wraps.

Your wraps are ready !

Serve immediately sliced into halves or whole. Or once cooled, store in the fridge for your work lunch.
