Breakfast Guacamole
This Guacamole came about out my desperation for a breakfast side.
On most weekday mornings we have sunny eggs and toast, most times with avocado slices.
But being the picky eater I am, I always felt that we needed some 'moisture' (yes, moisture)
I felt like the meal needed something to bring it altogether and generally make it a more hearty, interesting breakfast.

So one day I made some burgers and it had some guac in it.
Eureka !
I adapted the burger guac for breakfast meals, this meant removing the scotch bonnets, onions and garlic to make it more palatable for a first meal.
I added more diced tomatoes and replaced the bonnets (ata rodo) for some dried chilli flakes, because you know me...
This guac has revolutionized the breakfast game so of course I had to share it.

Ingredients:
1 Large Avocado
1 Large Tomato
Fresh Lemon Juice, 1 tsp
Chili Flakes, 1 tsp
Sprinkle of Salt
Sprinkle of Black Pepper
Grocery Shopping:
Avocados: Mallam Mini Fruit Market, Aboyade Cole St, VI
Everything else: Grand Square, VI

Prep:
Cut avocado into 2 and remove the seed and set aside.
Wash and dice tomato and set aside.
Instructions:
1. Scoop out the flesh of the avocado into a small dish and mash roughly, leaving small lumps of avocado.
2. Add diced tomato and mix gently.
3. Then add lemon juice and stir.
done. Add salt, black pepper and chili flakes before giving your guac a final mix.
Your Breakfast Guacamole is ready !
