Bolognese Sauce

When I’m making dinner I always try to think about things that can be stored for the next day’s work lunch, so when I have something like this I get excited and make loads and then at work I’m just chilling.
And I’ve always thought next day pasta tastes better anyway.

This recipe incorporates green peppers and carrots because I was feeling bad that day, I had just gone through a whole weekend of fizzy drinks, wine and cheesecakes so you know when you just have to have some veggies in your meal somewhere.  They are optional but they added a nice crunch to the meal so I think it’ll just be a thing for me now.

Ingredients:

​

Minced Beef 500g

1 pack of Spaghetti

3 large tomatoes

1 large onion

2 garlic cloves

Tomato sauce

Dried parsley ½ tbsp

Dried Oregano ½ tbsp

Salt (to taste)

Black pepper (to taste)

Chilli Powder (to taste)

1 large green bell pepper *optional

2 peeled carrots *optional

Prep:

​

Chop onions and dice garlic cloves.

Chop tomatoes, carrots and bell pepper.

Instructions:

​

1). In a large skillet over low heat, add 2 tablespoons of olive oil, once heated add the onions and garlic and fry, stirring occasionally until transparent (about 2 mins).

​

2). Add beef and stir making sure to crumble the beef with a spatula until browned (about 10 mins) then season with salt, to your taste.

​

3). Once beef has browned add chopped tomatoes, peppers and carrots. Stir together and let it simmer by reducing the heat to low for approx 8 mins or until tomatoes have juiced in the beef.

4). Then add tomatoes sauce, parsley, black pepper, oregano, chili powder and stir.

​

5). With the heat very low, cover the pot with the lid slightly ajar and allow the sauce to simmer for about 15 minutes.

done). Boil your spaghetti or choice of pasta according to its packet instructions.

Your bolognese is ready ! 

 

Serve how the Romans do it by mixing the pasta with the Bolognese sauce and topping with grated Parmesan and parsley if desired.**
