BAKED MEATBALLS
Ooo I love me some meatballs ! For me anything you can pick up and throw into your mouth is bae and these are purrfect.

I don’t know what it is but there is something really therapeutic about rolling minced meat into balls, I could roll balls all day!
And maybe it’s the beginning of raining season but right now I’m obsessed with bell peppers, the colour in my food is a much needed distraction from the gloominess outside.
So, here we have this Meatball (Stir Fry) recipe :) ....

​Ingredients:

​Mince beef, 500g
Egg white of 2 large egg
Breadcrumbs 1/4 cup
Salt, to taste
Thyme, 1 tbsp
Parsley, 2 tbsp
Oregano, 2 tbsp
Black pepper, 2 tbsp
1 small Onion
Mixed Bell Peppers
2 Garlic cloves
Olive Oil

​Prep:
​
Separate egg whites from yolk and whisk.
Dice garlic and onions.
Preheat the oven at 160.

​Instructions:
​
​1. In a deep bowl add mince, egg whites, bread crumbs, salt, 1 tbsp of black pepper, thyme, parsley, oregano.
Get your hands nice and clean, this next bit is slightly messy.
​
2. Using your hands (or a spatula), mix the contents in the bowl together; make sure ingredients are well combined. Then, roll chunks of mince into 1inch balls (I recommend small balls because they cook through quicker but you can do bigger if you prefer).
Repeat this step with the rest of the mince and place the balls onto a separate dish until all the mince has been rolled into balls.

3. Butter the surface of an oven dish and place balls onto it.

4. Increasing the temperature of the oven to 170, put the oven tray in the oven for 15 minutes, then remove to flip the balls onto the other side for a further 8 minutes. Make sure the balls are cooked through before removing the dish from the oven.
5. On a clean skillet, heat 2 tbsp of olive oil then add garlic and onions. Fry for about 2 minutes on low/medium heat or until transparent, then add bell peppers and simmer on medium heat for 3 minutes before adding remaining black pepper, thyme, parsley, oregano and salt, stir and simmer on low heat for another 5 minutes.

​done. Add meatballs to the peppers, stir and reduce the heat to low and cook together for further 2 minutes then remove from heat.
Your Baked Meatballs are ready !

​Serve with any side of your choice or just have it alone like I did. Oink.
