AVOCADO SALAD 

I know I'm not the only one that feels the guilt when you know you need something healthy on your plate, especially when you're eating something cheeky like fried chicken or chips.

But sometimes greens just ruin the dish, I'm sorry but its true (don't worry I won't be saying that to my kids). 

​

This is the perfect guilt salad and its yummy !!

I'm not kidding, I'd happily have this on the side of all my dishes, even alone !

​

It incorporates all the best vegetables, it has something for everyone and it literally takes 10 minutes to whip up, it's sweet and refreshing but the lemon juice adds the perfect amount of tang.

Tell me if you don't make this with every meal.

Ingredients:

​

2 Large Avocados 

1 Small Cucumber

 1 Small Red Onion

 Baby Tomatoes, 1 cup

Sweet corn, 1 cup

Fresh Basil, ½ cup

 Black Pepper, 1 tbsp

 Olive Oil, 1 tbsp

Lemon Juice 2 tsp

Instructions:

​

1) Remove the avocados from their shells and cut into small chunks.

 

2) Slice then dice cucumber into small cubes.

 

3) Dice onions.

 

4) Slice tomatoes into 2 halves.

 

5) Chop basil leaves.

 

6) Add all above ingredients into a deep bowl and stir gently making sure not to crush or mash any of the vegetables.

done) Season with black pepper and garnish with olive oil. Gentle stir contents of the bowl together then sprinkle on the lemon juice and stir again.

Your Avocado and Cucumber Salad is ready !
