spicy chicken stir fry

Its so easy to put together and its so tasty !

Best of all, you can have it with anything !!

​

This week I've just been chilling, I made a batch of this and stuck it in the fridge and all I have to do is just boil up some rice or potatoes or pasta, or whip out some bread and I have an easy peasy yummy meal.

​

Honestly, you need this one in your front pocket !

​

Yield: 2 servings

Ingredients 

Chicken breast, 300g 

Green and yellow bell peppers, x2 each 

Scotch bonnets aka ata rodo, x4

1 small white onion 

2 garlic cloves 

1 tbsp of chopped fresh parsley 

5 tbsp Olive oil 

Saxon seasoning, 2 tbsp 

Dried basil, 2 tsp 

Knoor cube, x2

Salt, to taste 

 

Grocery shopping 

Hubmart, Lekki Phase 1

 

 

Prep: 

​

Chop chicken breast into 1 inch chunks and set aside 

Chop a handful of fresh parsley 

Chop bell peppers 

Slice onions 

Dice garlic 

 

Instructions:

​

  1. In a small pan or skillet, heat 5 tbsp of olive oil, enough to shallow fry the chicken 

  2. While the oil heats, season chicken will Sazon seasoning, basil, salt, half a knoor chicken cube. Using your hands, massage the chicken to make sure the seasoning is well incorporated. 

  3. Once the oil has heated, add the chicken chunks and fry on low/medium approximately 10 minutes, turning frequently. 

  4. Once the chicken chunks have browned add onions and garlic to the skillet allow to fry to a minute. 

  5. Then add the peppers and stir. Add salt to taste, Knoor cube and parsley then stir. 

  6. Cover the skillet and continue to cook for a further 5 minutes, until the bell peppers have wilted. 

  7. Done. Remove from heat and serve with desired side. 

 

Enjoy !
