Tacos

Tacos are a great option for a family meal round the table, you can have all the cooked ingredients laid out on the table and everyone can go at it as they wish. 

 

Its also a good interactive meal and a good cheat if you’re like me and you can’t roll a wrap to save your life, you can have them do it themselves! 

 

Delis groceries store has made it superrr easy with this tacos pack, it literally has most of the dry ingredients you need to put a Taco meal together. And right round the corner is their fridge for your meats and veg.

The taco sauce and seasoning is a life saver because I remember about a year about going around Lagos looking for taco seasoning for this Taco Spaghetti I made, so if you want to make your own seasoning check that out.

There are a few places in Lagos that do quite good tacos but like I always say no one can feed you like you can feed yourself, I don't really like a busy taco so miss me with the tomatoes and lettuce etc., just sweet meat ! 

 

Anyhooo less talking more cooking and more doing.

Let’s get to it... 

Yield: 2 servings 

Prep time: <5 mins

Cook time: < 30 mins

Total time: < 35 mins

 

Ingredients: 

 

Mince beef, 400g

Hard Taco Shells, x2 

Soft Taco Shells, x2

Yellow bell pepper x1

Green bell pepper x1

Scotch Bonnet, x2 (ata rodo) 

Onion x1

Garlic x2

Olive oil 

2 hard taco shells

2 soft taco wraps

Taco sauce, 1 sachet 

Taco seasoning, 3 tbsp 

Salt, to taste 

Parmesan, to taste

Prep:

Finely chop the onion and garlic 

Deseed and chop bell peppers into small cubes 

Deseed and chop bonnets 

Instructions: 

 

1. In a large skillet heat 2 tbsp of olive oil and fry chopped onions until fragrant. Then add garlic and fry together for a minute. 

​

2. Add 1 tbsp of taco seasoning, stir and add minced beef. Make sure the meat is well crumbled and cook on low heat until browned, approximately 10 minutes. 

 

3. Then add remaining taco seasoning, salt and stir. 

​

4. Add taco sauce and stir. 

 

Meanwhile....

 

5. Place hard and soft tacos in the over at 180 dc for 3-5 minutes, until heated. 

Then remove for serving. 

 

done. Add bell peppers and scotch bonnets and cook on low heat until peppers are soft, to your taste. Then remove from heat and serve immediately 

(You can add the peppers in after the onions and garlic if you want them really soft, though I prefer them crunchy).

Stuff your hard shells and roll your soft wraps.
