Taco Spaghetti 

I'm think I'm a little bit of a different type of foodie because as much as I can love something I can also get tired of that thing very easily, there are only few things I have loved and will love for life - but thats a conversation to be had over drinks...now we're talking about the Bolognese.

I loveee pasta, there's no doubt about that, and of course Bolognese is an easy favourite. But like many other dishes sometime it's just boooring ! 

​

This Taco Spaghetti is perfect when you're in the mood for all the goodness of the classic bolognese, the ground beef, the tangy tomato sauce - but with a twist...

Yield: 4 servings 

Prep time: 10 mins

Cook time: 25 mins

Total time: 35 mins

Ingredients:

​

Spaghetti, 1 pack 

Ground Beef, 250g

Mixed Green & Red Bell Peppers, 1 cup

Parmasen, 1/4 cup 

Taco Seasoning, 1 tbsp

Olive Oil, 2 tbsp 

Tomato Puree, 2 tsp

Scotch Bonnets (ata rodo), x2

Salt, to taste

Grocery Shopping:

​

Taco Seasoning: Prince Ebeano, Oniru

Everything else: Shoprite, VI

Prep:

​

To mix your own taco seasoning, use this recipe.

​

Chop bonnets (with or without seeds) and set aside.

​

Chop 2 large green and red bell peppers (without seeds) into small cubes and set aside.

​

Grate parmesan and set aside.

​

​

Instructions:

​

1. In a large pot, heat olive oil over high heat and add ground beef. Crumble the beef with a spatula and stir frequently until all the beef has browned. About 5 mins.

​

2. Stir in taco seasoning, scotch bonnets, tomato puree, and the mixed peppers. Reduce the heat to medium. Cook for about 2 minutes. 

​

3. Then add 3 cups of water to the pot then add the spaghetti and salt, to your taste. 

4. Reduce the heat to a low/medium and cover the pot. Cook the pasta for 10 minutes before checking and adding water as necessary until the pasta is soft enough to your taste, (roughly about 20 mins cook time).

5. Once the pasta is soft enough and the water has dried out, remove the pan from the heat, add parmesan, stir and serve !

​

Your Taco Spaghetti is ready ! 

Top with extra Parmesan if desired, you know I did ;-)

I started eating as soon as it was ready ! I was pretty much full by the time i served, oops. 

Unfortunately that also meant I was too distracted to take any proper pictures, as you can the fork is still in the pan from when I was munching lol .

​

So someone should take a proper picture and do this dish justice !
