Chicken Salad Sub

This was born mostly out of laziness but also for the sake of not wasting food, which I never do…cough cough (sorry Daddy I lied). This time anyway, I didn’t want to waste this delicious salad Cajun Salad I had made the day before…all that chicken !

 

There's only so much salad a girl can eat, and I don’t rep #FitFam so I felt like I had already met my healthy quota for that week, there was a little bit of salad left in the fridge and I thought of mixing it with some cold pasta for lunch, (which would have also been quite nice now come to think about it…next time) but laziness took over so instead I grabbed a roll, sliced it open and whacked the salad in it. Wham, Bam thank you ma’am.

Lunch is done in less than 2 minutes !

 

This is perfect for packed lunched because you can make the salad in advance, and make the sandwiches every morning, I mean it took 2 minutes !! 
If you have kids, you need one this in your back pocket...thank me later x

Grocery Shopping:

Any Lagos supermarket that sells bread...

 

Prep:

Get the rolls out

Get your ready made Cajun Salad out. Click here for the salad recipe.

 

Instructions:

 

1. Cut the bread, buns or rolls out and cut down the centre, making sure not to separate the slices (unless you're using slices of bread).

2. Generously fill the rolls with your Cajun Chicken Salad.
