spicy tuna pasta

This recipe came about because I wanted something light yet tasty and honestly I didn't want to spend too much time in the kitchen.

 

It literally took 20 minutes.

Yield: 2 servings
Prep time: 10 mins
Cook time: 10 mins
Total time: 20 mins

Ingredients:
Spaghetti, half a pack
Tuna in brine or sunflower,
Mixed bell peppers, 3/4 cup
1 scotch bonnets (ata rodo)
Tomatoes (for topping) *optional
Onion, 3/4
1 small garlic clove
Mixed herbs, 1/2 tsp
Black Pepper, to taste
Salt, to taste

Prep:

Bring the spaghetti to boil according to packet instructions. Meanwhile...
Chop the bell peppers and the scotch bonnets
Slice the onion
Dice the garlic

Instructions: 

​

In a pan or skillet, heat the olive oil then add the onions and garlic to fry on low heat for approx 45 seconds

Then add all peppers, increasing the heat to a medium level. Fry the peppers, stirring frequently for 3-5 minutes

Crumble the tuna into the pan, add black pepper, salt and mixed herbs.

Stir and heat for about a minute before adding the cooked and drained spaghetti.

Pour the spaghetti into the pan and stir well to incorporate all the ingredients. Then reduce the heat to a low, cover and allow to simmer for 5 minutes.

Remove the pan from the heat and serve !!
