Spaghetti

Jollof

Every African is familiar with some form of Jollof, there is literally a list, I couldn't believe how many different ways you can make Jollof, I have plans to cook my way through that list.


Really most of the world knows about jollof rice when you think about it, and thanks to the constant beefing between countries about whos jollof is better, we have silliness like this to enjoy.

But its all fun in gest because deep down we all know Ghanian Jollof is actually the best (oops yes I said it), but thats a discussion for another day. 

 

We had Jollof Rice the Sunday before but I still somehow felt like it so I decided to switch it up just a little, replacing rice with spag and adding bell peppers for that little bit of crunch.

I'll be honest this was spicier than I intended it to be but I was glad because I preferred it with the extra spice ! but feel free to reduce the quantity of pepper to your taste.

Prep Time: 5 mins

Cook Time: 20 mins

Total Time: 25 mins

Ingredients:

​

Spaghetti, 1/2 pack

4 Large Tomatoes 

5 scotch bonnets (ata rodo)

1 large onion 

2 garlic cloves 

Mixed Bell Peppers, 1/2 cup chopped

Olive Oil, 2 tbsp 

Dried Oregano, 1 tsp 

Dried Thyme, 1tsp

Dried Parsley, 1 tsp 

Salt, to taste

Grocery Shopping:

Prep:

​

Wash and blend tomatoes, bonnets (with seeds for extra spice), onions and garlic.

Deseed and dice bell peppers and set aside.

​

Instructions:

​

1. In a large deep pot heat olive oil on a high level for approx. 30 seconds then pour in blended contents (should sizzle). 

Stir and cover the pot, reduce the heat to low and allow contents to cook for about 7 minutes. 

​

2. Stir content of the pot and add salt, oregano, thyme and parsley. Stir then add spaghetti to the now fried pepper.

 

3. Cook on low heat for 10 minutes and stir, then add mixed bell peppers and a cup of water (very little, not enough to cover the spaghetti), cover the pot maintaining the low heat.

4. Cover the pot again and cook on low heat for approximately another 10 more minutes. 

​

done. Check spaghetti to ensure it is cooked to your preferred softness. Remove from heat and serve.
