spicy tomato and basil rice 

w/ sazon fried chicken

My first cooked meal in a new kitchen.... and it was just banginggg

Its always an experience the first time I cook in a new kitchen, getting used to the heat of cooker and the space takes a minute. 

I don't like to think too much when I'm cooking, I set everything I need out before I start and do all necessary prep so I can just get lost in the cooking itself.

Its therapeutic ! 

 

Usually the taste and presentation of the dish is a tell to how comfortable I was and where my mind was when I was cooking. 

Not all the time I cook with love... lol

I had been cooking at my family house and just using the microwave at mine but I knew I had to break the barrier eventually so one random week night like that I got some wine, charged up my speakers, entered the kitchen and made this magic for us all to enjoy.

So you must... :)

FOR THE RICE 

​

Yield: 3 servings 

Prep time: 15 mins

Cook time: 10 mins

Total time: 25 mins

Ingredients: 

​

Basmati Rice, 2 cups

Large Tomatoes, x5 

Scotch Bonnets (ata rodo), x3

1 white onion

Vegetable oil, 4 tbsp

Salt, to taste

Knoor cube, x1 

Basil, 3 tsp

Sazon seasoning, 1 tsp

Grocery Shopping:

Prep: 

​

Rinse and drain rice then par boil rice (cook for approx 10mins or until nearly soft), drain and set aside. 

 

Chop tomatoes, onions and dice peppers. Set aside.  

​

Instructions: 

​

1. In a pot, heat 4 tbsp of olive oil then add onions and fry for 15 seconds (if you're using the oil from the fried chicken, remove the chicken from the skillet and drain excess oil, keeping approx 4 tbsp).

​

2. Add the diced peppers and tomatoes, stir and fry together on low heat for 2 minutes. 

 

3. Add salt (to taste), knoor, basil and sazon seasoning then stir. 

 

4. Turn the par boiled rice into the tomato/pepper/onion fry up and using a spatula or flat spoon, mix well (and gently) to incorporate the peppers and the rice.  

 

done. Cover the pot and continue to cook on very low heat for a 10 minutes (max), before removing from heat and serving.  

  

FOR THE CHICKEN

​

Yield: 3 servings 

Prep time: 5 mins

Cook time: 20 mins

Total time: 25 mins

Ingredients: 

Chicken breast, x3

Vegetable oil

Salt, a pinch

Knoor, x1 cube

Sazon seasoning, 2 tbsp 

Dried basil, 1/2 tbsp

​

Grocery Shopping:

Grand Square, VI

​

Prep: 

​

1. Clean and drain chicken then using a small cooking nice, poke holes in each individual breast (this is called jerking). 

​

2. In a deep skillet, heat oil (enough to cover half of each chicken) on low heat. 

​

Instructions: 

​

1. Then season the chicken with salt, knoor, sazon seasoning and basil. Using your hands, massage the seasoning into the chicken, making sure each chicken is well covered. 

​

2. Once oil is hot, increase the heat to a medium and add the seasoned chicken.

 

3. Fry the chicken on medium heat for 5 minutes, flipping once. Then reduce the heat to low, cover the pot and continue to fry for 10-15 more minutes, checking and flipping frequently until cooked to taste (I like falling off the bone chicken so I really let it simmer in its own juices for a while).

done. Once chicken is cooked through (pierce with a fork or knife), remove from heat and place onto a paper towelled plate to drain any excess oil.
