my village rice

YUM - EEE !

I hope we’re all ok doing this period...The Rona (Corona Virus) has really been kicking our social asses.
Who woulda thunk I would have enough of Netflix?

I know you don’t have anything to do so why don’t you try a recipe?
This one is a banger ... (not the rice, get it?)

My love for the ‘local’ food has no limits, anything palm oil based find me all over it !

I can’t remember the first time I had village rice but I remember thinking it was just plain genius !
The one I had wasn’t actually that nice but I really liked the concept so I brought it home and jazzed it up.
Now, as always...I share :-)

Yield: 4 servings
Cook time: < 30 mins
Prep time: < 10 mins
Total time: < 40 mins

Ingredients:
Basmati Rice, 2 cups
Dry round fish, x1
Green bell pepper, 1/2
Red bell pepper, 1/2
Yellow or Orange bell pepper, 1/2
Scotch Bonnets aka ata rodo, x3 (green and red)
Green beans, to taste (optional)
Small white onion, x1
Garlic glove, x1
Iru, 1 tsp
Stock cube, x2
Thyme, 2 tsp
Salt, to taste

Grocery Shopping:
The (Village) Market
Basmati Rice: Shoprite


 

Prep:


1. Clean and debone the dry fish (once clean sit in hot water to soften)

2. Clean and dice the bell peppers, green beans, scotch bonnets and set aside.

3. Slice the onions and garlic and set aside.

Cook:


1. Clean and boil parboil rice (approx 13 mins on medium/high heat) (we want it semi soft because it will cook further in the sauce).

2. In a medium pot heat palm oil and add chopped garlic and onions and fry on medium heat for 1 minute before adding the chopped bell peppers and green beans.
Stir and fry for a about 2 minutes then season with 2x stock cube, salt, and thyme.

3. Then stir in the dry fish and iru continue to fry on low heat for a further minute.

4. Pour in the parboiled rice and stir well. Reduce the heat to low, cover the pot and cook for 10 minutes. (If necessary add a little bit of water for the final cook of the rice)

5. Do a taste test.

Once ready remove from the heat and serve hot hot!
