meatball sub

So I went to Shoprite, got carried away and bought the big saver pack of mince (even though I only ever cook for 2). 

So prepare for the meatball madness coming your way this week (swedish meatballs next).

Meatball subs are easier than they look, though also take a little longer than they look...thats if you want to do it right anyway. 

I decided to make my meatballs and the marina from scratch even though Shoprite does sell the pre rolled balls and pasta sauce.

It. Was. Mad. 

For me a little much, I'll be honest because I really do like my bitesized portions of food, and this defs was not bitesized. 

It was a mouthful and I have extra small hands so it was work ! lol

But so tasty...

Yield: 2 servings 

Prep time: <10 mins

Cook time: <25 mins

Prep time: <40 mins

 

Ingredients : 

 

Lean Minced Beef, 300g

1/2 of 1ft French Roll

1 whisked egg

Panko Breadcrumbs, 2 tbsp 

Canned Crushed Tomatoes

1 small white onion, grated 

3 small garlic gloves, grated 

Tomato purée, 1/2 tbsp 

Olive Oil, 1 tbsp 

Grated Parmigiano, 1/4 cup 

Freshly chopped parsley, 1 tbsp 

Chili powder, 2 tsp

Salt, to taste 

Black Pepper, to taste 

 

Grocery Shopping:

 

Shoprite, The Palms 

 

Prep :

 

Preheat oven at 160 dc 

 

In a bowl combine mince, whisked egg, breadcrumbs, grated onion, grated garlic, 1/2 tbsp of fresh parsley, chilli powder, salt and black pepper. 

Using clean hands, mix the ingredients of the bowl together making sure they are well incorporated into the mince.

Instructions : 

 

  1. Begin by rolling your mixed minced into 1inch balls or smaller. (you want to get at least 8 balls).

  2. Once all the mince is rolled into balls, place them onto a lightly oiled oven tray and place the tray into the oven. 

  3. Increase the heat to 190 dc and bake the meatballls for 20 minutes, turning half way.

   While the meatballs are baking... 

 

For the sauce : 

 

  1. In a small saucepan, heat 1tbsp of olive oil and pour in the crushed tomatoes. 

  2. Add tomato purée, 1/4 cup water, lightly salt and black pepper. Stir and cover the saucepan and reduce the heat to low. Cook for 10 minutes

  3. Remove the lid from the saucepan and stir, add baked meatballs, 1 tsp of chopped parsley and allow to simmer with the lid off for 5 minutes before removing from the heat. 

 

For the sub : 

 

1. Cut the roll open at the top and place in the oven for 3 minutes at 170 dc.

2. Fill the roll with the meatball sauce and top with cheese. 

 

done. Place the filled sub back into the oven for 1 minute or until the cheese has melted.

Garnish with freshly chopped parsley, if desired.
