LOADED BREAKFAST CROISSANT 

This is another great one for those mornings where you feel like you deserve to indulge.

You could replace the croissant with bread but I think the croissant adds the perfect amount of crisp to contrast the softness of the easy egg and avocado spread.

​

Don't even get me started on the spread...find out for yourself. 

​

Best of all ? No prep needed !

Ingredients: 

​

2 Croissants - Halved 

2 large eggs

1 large avocado 

Sriracha or hot sauce 1 tsp

Mustard 1tsp

Black Pepper 2 tbsp

Smoked Ham 2 large strips 

Olive Oil 1 tsp

Instructions:

​

1) Half the avocado, slice one half into chunky slices (i recommend to slice the avocado with the skin left on and then peel the skin off each individual slice) then place in the fridge or set aside to be used to serve later. 

​

2) With the second half, scoop the avocado out into a bowl, add Sriracha/hot sauce, mustard and 1 tsp of black pepper. Mash the avocado well and stir together until contents of the bowl are well incorporated. Set aside.

 

3) Place halved croissants in a grill oven at 160 for 2 minutes, flip and toaste for a further minute to make sure both sides are toasted and are golden brown. Alternatively, use a toaster on a low heat, but toast at step 5 (below) while you are preparing the eggs so they do not get cold.

 

4) In a large frying pan, heat the olive oil and fry the ham slices for 3-5 minutes (according to your desired crispiness) on each side. Once ready place on a paper toweled plate to drain any excess fat.

 

5) (This is a good time to start toasting your croissants if you're using a toaster). Drain the frying pan to insure the is only about 1 tsp of oil remaining, then break an egg into the pan and fry undisturbed for one minute (or until the white base is solid) before adding sprinkles of black pepper to your taste. Repeat same with the second egg.         

Once ready place on a plate and set aside.

done) Generously cover both insides of the croissants with the avocado spread, then layer with ham and egg.

 

Your Loaded Breakfast Croissant is ready !

Serve with extra slices of avocado.
