Jerk Chicken

So one evening I'm in bed minding my own business and the bf comes and shows me this video of the SORTEDfood guys making jerk chicken with rice and peas. Me being me it immediately took me back to the meal I had at Mango Room restaurant in Lekki and the rest was history, I had to make it (obvs).

I adapted their recipe a little because it looked like it would be a little sweet for my taste so this one is spicier.

I'll be honest, I had no intentions of mixing my own jerk seasoning because I wasn't sure if I had all the seasonings to mix it myself at home and I just wanted to eat as soon as possible, but jeeez....finding jerk seasoning in Lagos ?

Forget it.

I went ev-ry-where, I took it really personally because I just couldn't believe it didn't exist, I blamed myself for just not knowing where to go, I even had to reach out to a few other Nigerian foodies and bloggers to ask where I could find it (shout out to Kitchen Butterfly and Trybbbe !). They had some good suggestions but after I had been to 5 supermarkets and sent the bf out of his way and he still couldn't find it, I decided to mix. 

So here is the recipe for blending your own jerk seasoning which can then be conveniently incorporated as a wet jerk rub.

 Cooking the chicken and rice together in the oven really does wonders to the flavor of this dish.

Prep time:10 mins

Cook time: 30 mins 

Total time: 40 mins

Ingredients:

​

Chicken Thighs x8

Garlic Cloves, diced x2

Scotch Bonnets, chopped x4

Honey, 2 tsp

Tomato puree, 1 tbsp

Olive oil, 2 tbsp

Lime juice, 1 tbsp

Lime zest, 1 tsp

Unsalted butter, 1 tbsp

Cayenne Pepper, 2 tbsp

Paprika, 1 tbsp

Dried Pepper Flakes, 1 tbsp

Dried Thyme, 2 tbsp

Onion Powder, 2 tbsp

Garlic Powder, 1 tbsp

Brown Sugar, ½ tbsp

Ground Cinnamon, ¼ tbsp

Ground Nutmeg, ½ tbsp

Ground All Spice, 1 tbsp

Black Pepper, ¼ tbsp

Salt, 1 tbsp

Grocery Shopping:

Prep: 

​

Combine all seasonings in a bowl and with a spoon, blend well together (can be stored in a airtight container for up to 3 months for later use). 

​

To the mixed seasoning, add honey, puree, olive oil, lime juice and mix together. Then add lime zest, garlic and bonnets and mix well (can be stored refrigerated for up to 3 weeks). 

​

Add clean chicken to a bowl and cover in the jerk rub. Massage the chicken well with the rub and set side. 

​

Using a skewer or pointed knife, poke holes in each chicken, piercing through the flesh (this is jerking, it will ensure the flavours really get into the chicken). 

​

Instructions:

​

1. In a pan, melt butter and seal the chicken on both sides by frying for about 3 1/2 minutes before flipping and frying for another 3 minutes. 

 

2. Remove the chicken from the pan and place on a grill rack and in a pre-heated oven at 180 degrees. 

​

3. Grill chicken for 15 minutes then flip and grill for another 10 minutes. 

​

done. Remove chicken from the grill and serve. 

​
