Honey & Cinnamon Chili Chicken
I know I've been quiet on the recipes for a while so I'm kicking off my return from my little sabbatical (sometimes life happens) with this scrumptious chicken recipe.
I felt like something light for sunday lunch and I wanted something sweet.
I always say you can't go wrong with a little bit of honey (wink, those who know know) and this recipe is testament !

Cinnamon I love, its one of my favourite seasonings because it works perfectly for sweet and savoury dishes.
You could have some Cinnamon Ice Cream or you could have Cinnamon Glazed Salmon.
Its perfect.

And the Chili, well because...always Chili.
Prep time: < 5mins
Cook time: < 40mins
Total time: < 45mins
Yield: 1-2 servings
Ingredients:
Chicken drumsticks x4
Honey, 4 tbsp
Cinnamon, 3 tsp
Olive oil, 2 tsp
Small Scotch bonnets, x2
Garlic, x2
Salt, to taste
Crushed chili flakes, 1tsp
White pepper, 1 tsp

Clean and dry the drumsticks

Jerk the chicken by piercing with a knife a few times, making sure each chicken is well jerked.
Instructions:

1. Season the chicken with salt, then add the cinnamon, white pepper, crushed chili flakes and massage the seasonings well into the chicken.

2. Add honey and massage into the season chicken before adding the chopped bonnets and garlic.
3. Drizzle with olive oil and massage well, the place your drumsticks onto an oven dry and increase the heat to 190 dc.
4. Grill the drumsticks for 20mins undisturbed then check and flip them over.
done. Grill for a further 10 minutes. Pierce a drumstick to make sure they’re cooked through before serving.
