Who doesn't love KFC Chicken?! Well now you can fake it at home! (You're welcome :-)

This is one I've always wanted to learn how to make, growing up I had an aunt who would always have this KFC style chicken ready everytime we went to her house, it was a treat my brother and I looked forward to anytime my mum said we were going to Aunty Vernoica's house.

Aunty Veronica passed away last year, may God rest her soul. But her memories still live on.
Even though I hadn't seen her in ages everytime I make this I think of her...food can be special like that.

I share this one as I do most my recipes, from the heart.

Ingredients:
​
Skinned Chicken Breasts 500g
Plain Flour 4 small cups
Vegetable Oil
Salt, to taste
Black Pepper, to taste
Paprika 1 1/2 tsp
Cayenne Pepper 1 1/2 tsp
Basil 1 tsp
Chilli Powder 1 tbsp

Clean and dry the chicken breasts with a paper towel.
In a large bowl combine flour, paprika, cayenne pepper, chili powder and basil, stir with a spoon to mix and set aside.
Fill a deep large pan with vegetable oil to a high enough level to cover each individual chicken breasts, begin to heat at a high temperature.

Instructions:

1) Salt and black pepper the chicken breasts to your taste, then using your hand massage the breasts.
​
2) Individually dip each chicken breast into the flour mixture, covering both sides in the flour and pat down the chicken breast to make sure it does not have any excess flour hanging on, before then carefully dropping into the hot oil. (Reduce heat to a medium/high heat).

3) Repeat this step with all chicken breasts, frying each for approximately 10 minutes. Turn each breast frequently to make sure it is cooked through. (You can pierce the breasts with a fork to check it has cooked through.)
