Chicken Nuggets Stir Fry

I don't have kids (yet) but I just know they will love this !

Take my word for it, I'm like a kid with my food in some ways because I prefer small cuts of meat with meal so I can just throw them in my mouth as I eat, no need to waste time with a knife and fork (oink). 

​

To be honest, I don't know what it is with kids and nuggets but when i think about nuggets they take me back to my McDonalds kids meal days (ahh good times).

Luckily, I don't discriminate and I know the adults will love this too !


Using the yellow bell peppers is key, it adds a beautiful natural sweetness to the otherwise savory dish.

When we were eating this, I actually mmmh'd out loud ! which I never do to my own dishes. 

(mmmh out loud, MOL, I might make that a thing actually...#mol. TM)

Yield: 3 servings

Prep time: 10 mins

Cook time: 20 mins

Ingredients:

​

Skinned Chicken Breasts 500g

Plain Flour 4 small cups 

Mixed Bell Peppers (green and yellow)

1 small white onion 

2 garlic cloves

Vegetable Oil (for deep frying)

Olive Oil (2 tbsp)

Salt, to taste

Black Pepper, to taste 

Paprika 1 1/2 tsp

Cayenne Pepper 1 1/2 tsp

Basil 1 tsp

Chilli Powder 1 tbsp

Prep: 

​

Clean, dry and slice chicken breasts into 1 inch thick nugget sides chunks.

Clean, de-seed and slice bell peppers.  

Slice onion and dice garlic.

In a large bowl combine flour, paprika, cayenne pepper, chilli powder and basil, stir with a spoon to mix and set aside. 

Fill a deep large pan with vegetable oil to a level high enough to cover an individual chicken nugget, begin to heat at a high temperature.

Instructions:

For the Nuggets: 

​

1) In a bowl add salt and black pepper to taste, to the nuggets then mix to make sure they are well seasoned. 

 

2) Dip a chicken nugget into the flour mixture, covering both sides in the flour, then pat the nugget to make sure there is no excess flour before carefully dropping into the hot oil. (Reduce heat slightly, though maintaining a high temperature).  â€‹

3) Repeat this step with all chicken nuggets, frying each for approximately 10 minutes. Turn each nugget frequently to make sure it is cooked through. (You can split open the nugget to check it has cooked through.)

done) Once the nuggets are golden brown, remove from oil onto a paper toweled dish to drain any excess oil.

For the Stir Fry:

​

1)  On a clean skillet, heat 2 tbsp of olive oil then add garlic and onions.  Fry for about 2 minutes on low/medium heat or until transparent, then add bell peppers and simmer on medium heat for 5 minutes before adding remaining black pepper, thyme, parsley, oregano and salt, stir and simmer on low heat for about 3 minutes.

Your Stir Fried Nuggets are ready !

​Serve with any side of your choice. LITERALLY. It goes with everything, and also works pretty well alone - don't be shy. Oink.
