cajun chicken salad

What type of luncher are you ? When it’s the middle of a long work day do you prefer big hearty meal to keep you going or do you need something light to save you from struggling with sleep ? 

No judging but shout out to the guys who can have a full plate of poundo with vegetable and all the meats - they are the real OGs.

 

But for those of us, who know our limits, who already dragged ourselves out of bed in the morning and don’t want to spend the rest of the day yawning ... this one is for you. 

 

The perfect something light for lunch. 

You can make a batch of this salad for the week and take the stress off figuring out what to eat at lunch...thank me later. 

 

On topic/off topic 

I would like to take a minute to appreciate Shoprite for their salad section, it’s not everything it’s really not but they try and thanks to them, their orishirishi salad mix changed my salad game forever !

 

Now, cooking ... 

 

 

Ingredients: 

 

250g Chicken breast 

300g Lettuce (not iceberg) 

3 large Tomatoes 

1/2 Cucumber 

1 small Carrot 

Salt (to taste) 

Black pepper (to taste) 

1 1/2 tbsp Cajun seasoning (to mix yourself, see recipe here) 

1/2 tbsp Olive oil or 1-2tbsp salad dressing of your choice 

 

 

Grocery shopping: 

 

Shoprite, The Palms (for the mixed lettuce and everything else) 

Delis Supermarket (for the chicken Breast)

 

Prep:

​

Rinse and drain lettuce, tomatoes, cucumber. 

Chop lettuce and dice tomatoes and cucumber, first into slices then each slice into half and each half into quarters. Then set aside. 

Shave the skin of the carrot and grate into a small bowl and set aside. 

Rinse and chop chicken breast into inch chunks and season with salt, black pepper and 1 tbsp of Cajun seasoning. 

(To make your own Cajun seasoning, in a bowl combine .... 

 

 

Instructions: 

​

1. Heat 2 tbsp of olive oil and add the chicken chunks. 

​

2. Fry for approximately 10 mins turning frequently to ensure it is well browned and cooked through. 

Once fried drain the chicken onto a paper toweled plate and set aside to cool. 

​

3. In a bowl add chopped lettuce, tomatoes and cucumber and using a spatula, mix well. 

 

done. Add olive oil or dressing and using a spatula mix again to make sure the dressing is well incorporated. 

Then add chicken to your toss your salad lightly.

Your Cajun Chicken Salad is ready !
